Homemade Deli Meat, Cheese, and Vegetable Trays
Ptacek's wants everyone to have a safe and enjoyable event. Please follow these general guidelines to a safe and fun event.
- Hot food needs to be brough up to temperature (165 degrees) in as short a time as possible (max time is 2hrs.). Once it is heated it needs to be maintained at 145 degrees or hotter. Make sure to stir often to distribute heat. Keep plenty of fluid on food. It is considering unsafe to heat food in crock pots. They generally do not get food hot enough within the required time.
- Cold foods need to be kept at 40 degrees or lower. Do this by keeping foods on ice and putting out smaller amounts of food.
- Make sure to deal with leftovers in a timely manner. Cool hot foods as quickly as possible. Put in smaller containers to reduce the total volume. Refrigerate immediately. Food kept between 40-140 degrees for more than 4 hours is considered unsafe. When in doubt, throw it out.
- Reheat leftovers to 165 degrees.
- Special Tips: roasters and large coffee pots require a lot of electricity. Check equipment throughout party to insure equipment is working and no fuses are blown. Make sure to keep food area clean and handle food with clean hands/utensils.
